Frozen Mardi Gras Cake

Total Time: 1 hr Preparation Time: 1 hr

Ingredients

  • Servings: 16
  • 20 ladyfingers, split
  • 1 (6 ounce) can frozen orange juice, undiluted
  • 1/2 gallon vanilla ice cream
  • 1 (10 ounce) package frozen strawberries
  • 1 (8 1/4 ounce) can crushed pineapple, drained
  • 12 maraschino cherries
  • 1/2 cup pecans, chopped
  • 1/4 cup powdered sugar
  • 1 cup whipping cream

Recipe

  • 1 line the bottom and sides of a 10-inch spring form pan with the ladyfingers.
  • 2 mix orange juice and half of the ice cream; pack into prepared pan; freeze.
  • 3 mix strawberries and pineapple; spread over ice cream layer and freeze.
  • 4 chop cherries, blend with nuts and remaining ice cream.
  • 5 mix and spread over fruit layer; freeze.
  • 6 add sugar to cream, whip and then spread over top; freeze.
  • 7 about 1/2 hour before serving, remove from freezer and unmold.
