Tasty Chicken Tortilla Soup

Ingredients

  • Servings: 4
  • 2 boneless skinless chicken breasts, cubed
  • 1/2 teaspoon olive oil
  • 1/2 teaspoon garlic, minced
  • 1/4 teaspoon ground cumin
  • 2 (14 1/2 ounce) cans chicken broth
  • 1 (16 ounce) can black beans, rinsed
  • 1 (15 1/4 ounce) can whole kernel corn, drained
  • 1 cup onion, diced
  • 1 (4 ounce) can diced green chilies
  • 1/2 teaspoon chili powder
  • 1 tablespoon lemon juice
  • 1 cup chunky salsa
  • 2 cups corn tortilla chips
  • 1/2 cup shredded monterey jack cheese
  • 4 tablespoons light sour cream

Recipe

  • 1 in a large pot over medium heat, sauté the chicken in the olive oil for 5 minutes.
  • 2 add the garlic and cumin and mix well.
  • 3 stir in the broth, corn, onion, chillies, black beans, chili powder, lemon juice, and salsa.
  • 4 reduce heat to low and simmer for about 20 to 30 minutes.
  • 5 break up some tortilla chips into individual bowls and ladle soup over chips.
  • 6 garnish with cheese, sour cream, and additional broken tortilla chips.
