Slowcooker Chicken Sausage Gumbo

Total Time: 9 hrs Preparation Time: 1 hr Cook Time: 8 hrs

Ingredients

  • Servings: 10
  • 6 -10 hot italian sausages, casings removed
  • 1 whole chicken, boiled and shredded in to bite size pieces
  • 2 large green peppers
  • 2 large red peppers
  • 2 large yellow peppers
  • 2 large red onions
  • 2 minced garlic cloves
  • 8 ounces mushrooms, sliced (portobella)
  • 3 (16 ounce) cans diced tomatoes
  • 2 potatoes, diced
  • 16 ounces frozen gumbo-style vegetables
  • 1/2 teaspoon garlic salt
  • 1 teaspoon cajun seasoning
  • 1/2 teaspoon dried red pepper flakes
  • 1/4 teaspoon black pepper

Recipe

  • 1 chop up and brown hot sausage and then place in crock pot.
  • 2 add diced tomatoes in crock pot.
  • 3 add desired spices with the layers of vegetables.
  • 4 mince peppers,onions,and garlic in food processor and add to pot.
  • 5 add sliced mushrooms to pot.
  • 6 add gumbo vegetables.
  • 7 add cut up potatoes.
  • 8 add chicken.
  • 9 do not stir! let the layers cook down as placed in the pot.
  • 10 cook gumbo on high setting for 3 hours and shift to low setting for 5 hours.
  • 11 after 8 hours stir and serve.
