Mexicali Soup

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 lb lean ground beef
  • 1 (1 1/4 ounce) package taco seasoning mix
  • 6 cups water
  • 2 cups salsa
  • 1 1/2 cups kidney beans, undrained
  • 2/3 cup tomato paste
  • 3/4 cup acini di pepe pasta
  • 3/4 cup sliced ripe olives
  • 1 lb cheddar cheese
  • 1 cup sour cream
  • 1 (16 ounce) package tortilla chips

Recipe

  • 1 in large bowl, mix meat with seasoning mix, shape into 1-inch meatballs.
  • 2 in a 4 quart nonstick saucepan, cook meatballs turning frequently, until brown, drain.
  • 3 add water, salsa, beans with liquid & tomato paste.
  • 4 heat to boiling.
  • 5 reduce heat, simmer 10 minutes.
  • 6 return soup to boil, stir in uncooked pasta.
  • 7 boil, stirring frequently, 14 minutes.
  • 8 stir in olives.
  • 9 sprinkle each serving with cheese, top with sour cream.
  • 10 garnish with chips.

Stella's Favorite Blackened Chicken With Pasta

Ingredients

  • Servings: 6
  • 4 tablespoons cajun seasoning
  • 1 -3 garlic clove (minced)
  • 1/2 onion (minced)
  • 1 (28 ounce) can diced tomatoes
  • 10 medium mushrooms, sliced
  • 1 (8 ounce) jar roasted red peppers
  • salt (to taste)
  • 1 pint heavy cream
  • 8 ounces pasta
  • 6 skinless chicken breast halves (boneless)
  • 1/4 cup cajun seasoning
  • 1/2 teaspoon salt
  • 2 -3 garlic cloves, minced
  • 1 1/2 cups chicken broth (defatted)
  • 1/4 cup olive oil

Recipe

  • 1 saute garlic and onion in a frying pan that has been sprayed with vegetable spray, until onion is soft.
  • 2 add roasted peppers, sliced mushrooms, til the mushrooms cook down, add tomatoes (do not drain), cajun spice, heavy cream. simmer til sauce thickens. season with salt to taste. add more cajun spice if desired.
  • 3 place the chicken in a ziploc bag and marinate with cajun spice, salt, garlic and chicken broth, refrigerated, for 2 or 3 hours. remove chicken and discard the marinade. grill chicken on very hot, buttered grill for 12 to 14 minutes or until done.
  • 4 cook pasta, drain, and place on a platter.
  • 5 lay cooked chicken on pasta and then drizzle with sauce.

Turkey Nachos

Ingredients

  • Servings: 6
  • 1/2 lb leftover roast turkey meat, shredded
  • 1 1/2 tablespoons fresh lime juice
  • salt
  • pepper
  • 2 tablespoons vegetable oil
  • 3 bell peppers, finely chopped (preferably red and orange)
  • 1 garlic clove, finely chopped
  • 1/4 teaspoon ground cumin
  • 1 teaspoon dried oregano, crumbled
  • black beans, rinsed and drained
  • 4 ounces corn tortilla chips (not low-fat)
  • 2 cups grated jalapeno jack cheese (8 ounces)
  • 1/4 cup chopped scallion top
  • 1/2 cup chopped fresh cilantro leaves
  • 1 cup sour cream
  • 2 -3 teaspoons finely chopped pickled jalapeno peppers

Recipe

  • 1 preheat oven to 450 degrees f.
  • 2 toss turkey with lime juice and season with salt and pepper.
  • 3 heat 1 1/2 tablespoons oil in a 10-inch heavy skillet over moderately high heat until hot but not smoking, then cook bell peppers, stirring, until crisp-tender, about 3 minutes.
  • 4 transfer to a bowl. heat remaining 1/2 tablespoon oil in skillet over moderate heat and cook garlic, cumin, and oregano, stirring, 1 minute. add the beans and cook, stirring, until heated through, about 1 minute. season with salt and pepper.
  • 5 make 2 layers each of corn chips, sauteed peppers, beans, turkey, cheese, scallion, and cilantro in a 3-quart shallow baking dish. bake nachos in middle of oven until cheese is melted, 6 to 10 minutes.

Southern Lamb Barbecue (for Sandwiches)

Ingredients

  • 10 -12 lbs lamb roast (2 shoulder or butt roasts, about 5-6 pounds each, bone-in)
  • 1/8 cup lamb seasoning ("rub", see directions)
  • 8 tablespoons butter, melted
  • 20 ounces barbecue sauce (i use sweet baby ray's brand)
  • water

Recipe

  • 1 rub the roasts on all sides with the meat rub. if you don't have one already, try: spicy rib rub for lamb roast. commercial rubs are also available and work just fine.
  • 2 on a gas or charcoal grill, over high heat, sear/brown the roasts on all sides (10-15 minutes total).
  • 3 after roasts have been seared, place them in a large roaster pan, elevating them above the bottom of the pan with a small grill or with oven-proof plates. pour 12 ounces of water into the bottom of the roasting pan. top the roasts with the melted butter.
  • 4 in an oven pre-heated to 275°f, allow the roasts to bake, covered, for 6 hours. at the end of 3 hours, turn the roasts.
  • 5 at the end of the 6 hours, check the roasts for tenderness. the bone should freely release from the meat when done. if the roast is still rubbery, allow it to continue to roast, covered, for up to 2 more hours.
  • 6 when the roasts are tender, allow them to cool on a platter and then de-bone and de-fat the meat. break up all pieces of meat. place the meat in a large cooking pot, add about 4 ounces of water and bring to a simmer.
  • 7 just as the meat begins to re-heat, start adding barbecue sauce a little at a time, stirring it in carefully. when it gets enough barbecue flavor, stop adding sauce! it's easy to add too much and you may not need the full 20 ounces, depending on your own personal tastes.
  • 8 serve on good sandwich buns, topped with coleslaw.
  • 9 note: it is important to use the cheaper, bone-in type lamb roasts rather than, say, lamb loin. the bone-in roasts have triple the flavor and the higher fat content aids in achieving tenderness. also, be aware that the roasts labeled "lamb butt" are actually lamb shoulder--that's the roast that you want.

Zucchini Mock Crab Cakes

  • 2 cups zucchini, shredded
  • 2 cups italian seasoned breadcrumbs
  • onion, chopped as desired
  • green pepper, chopped as desired
  • 1 -2 tablespoon old bay seasoning
  • 2 -3 tablespoons miracle whip
  • oil (for frying) (optional)

Recipe

  • 1 preheat oil for frying in pan. if you want to eliminate the oil, preheat a non-stick pan and spray with pam or equivalent.
  • 2 mix all ingredients together and form into patties.
  • 3 fry in oil till browned and crisp.

Ingredients

  • 2 cups dates, chopped
  • 2 cups nuts, chopped
  • 1 cup candied cherry, chopped
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 2 cups sugar
  • 2 eggs, beaten separately (whites separate from yolks)
  • 4 cups all-purpose flour, sift before measuring
  • 1/2 cup butter, softened
  • 1 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 sift flour and baking powder together.
  • 3 in a separate bowl, cream butter and sugar.
  • 4 put dates in a large mixing bowl and stir baking soda into them.
  • 5 pour 2 cups boiling water over dates.
  • 6 add butter and sugar mixture and stir well.
  • 7 add egg yolks and stir.
  • 8 coat nuts with some of the flour and then add them to the mixture.
  • 9 add the flour and spices and mix well.
  • 10 last add the egg whites and stir. (note: you do not have to beat the egg whites to a stiff peak before adding; just beat them until blended).
  • 11 bake in a greased loaf or tube pan (angel food pan) for 60 minutes or until toothpick inserted into the middle comes out clean. if you use a standard loaf pan, this will make two loaves.

Southern Penne Pasta With Chicken

Ingredients

  • 3/4 lb barilla penne pasta
  • 2 tablespoons butter
  • 2 boneless skinless chicken breast halves, sliced 1/2-inch thick
  • 3 garlic cloves, minced
  • 1 bunch green onion, chopped
  • 2 tablespoons cajun seasoning
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon ground cayenne pepper
  • 8 ounces heavy cream
  • 1 green bell pepper, julienne
  • 1 red bell pepper, julienne
  • 8 ounces fresh mushrooms, quartered
  • 3/4 cup parmigiano-reggiano cheese, grated

Recipe

  • 1 cook barilla penne pasta according to package directions.
  • 2 drain; set aside.
  • 3 meanwhile, melt butter in a large skillet over medium-high heat.
  • 4 add chicken; cook, stirring frequently, until browned, about 6 to 8 minutes.
  • 5 add garlic, onions, cajun seasoning and ground black and cayenne peppers.
  • 6 add bell peppers and mushrooms; stir to combine.
  • 7 cover and cook for 5 minutes.
  • 8 uncover; stir in cream and let simmer another 2-3 minutes.
  • 9 stir in parmesan cheese.
  • 10 remove sauce from heat, stir in cooked pasta and serve immediately.

Spicy Deep Fried Gator Balls

Ingredients

  • 1 lb cooked flaked alligator meat
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 3 tablespoons cajun seasoning
  • 1 tablespoon sea salt
  • 1/2 tablespoon black pepper
  • 1 garlic clove, minced
  • 1 egg
  • 1 cup unseasoned breadcrumbs
  • 2 cups cornmeal
  • 3 cups peanut oil
  • 1 tablespoon frank's red hot sauce

  • 1 mix everything but cornmeal and oil together.
  • 2 heat oil.
  • 3 shape into balls.
  • 4 roll balls in cornmeal until coated.
  • 5 fry in oil until golden brown.
  • 6 drain on paper towels.

Quick And Easy Cornbread

Ingredients

  • 2 1/2 cups self-rising cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup melted butter (1 stick blue bonnet works well)
  • 1 1/2 cups milk
  • 2 large eggs, lightly beaten
  • vegetable shortening

Recipe

  • 1 preheat oven to 425.
  • 2 grease sides and bottom of a 13x9 glass pan with the shortening.
  • 3 mix the cornmeal, flour, salt and sugar together.
  • 4 mix in the butter, eggs, and milk just until it's well mixed. should be the consistency of grainy glue.
  • 5 pour into the pan and bake for 25 min (i have a small oven and my cook times may be a bit off -- check at 20 could take up to 30 depending on your oven).

Sourdough Starter

Ingredients

  • 2 cups flour
  • 2 cups water
  • 1 package yeast

Recipe

  • 1 combine flour, water and yeast in a warm bowl.
  • 2 use a wooden or plastic spoon to stir mixture till smooth.
  • 3 cover the container with plastic wrap and place it in a warm, draft-free area for 36-48 hours; your starter should be slightly bubbly and give off a delicious sour, yeasty, aroma.
  • 4 its consistency will be that of light pancake batter.
  • 5 cover the sourdough container and put it to rest in the fridge.
  • 6 i use a mason jar.

Golden Pecan Pie

  • 1 combine dry ingredients in large mixing bowl.
  • 2 add eggs, vanilla and butter.

  • 5 pour into pie shell and bake at 350 degrees f.
  • 6 for 55-60 minutes, or until tests clean.

Pineapple Rice Pudding

  • 3 cups cooked long-grain rice
  • 2/3 cup sugar
  • 1/2 teaspoon salt

  • 1 (20 ounce) can pineapple chunks
  • 1/4 cup packed brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract

  • 1 in a saucepan, combine 3 1/2 c milk, rice, sugar, and salt; bring to a boil over medium heat.
  • 2 cook for 15 minutes or until thick and creamy, stirring occasionally.
  • 3 in a mixing bowl, beat cream cheese.
  • 4 beat in eggs and remaining milk.
  • 5 stir into rice mixture.
  • 6 cook and stir for 2 minutes over medium heat until mixture reaches 160 degrees.
  • 7 add vanilla.
  • 8 spoon into six dessert dishes.
  • 9 drain pineapple, reserving juice; set pineapple aside.
  • 10 in a saucepan, combine brown sugar, cornstarch, butter, salt and pineapple juice.
  • 11 bring to a boil; cook and stir for 2 minutes or until thickened.

  • 13 spoon over pudding.

Roasted Bananas With Chocolate Yogurt Cream

Ingredients

  • 1 1/2 cups low-fat vanilla yogurt
  • 4 bananas, cut in half cross wise then lengthwise
  • 3 tablespoons dark brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon dark rum or 1 tablespoon lemon juice
  • 1 tablespoon cold butter, cut into small pieces
  • 1/2 cup whipping cream
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon confectioners' sugar
  • cooking spray
  • toasted chopped almonds or toasted chopped macadamias or toasted chopped pecans

Recipe

  • 1 line a sieve or colander with cheesecloth and set over bowl, leaving at least 1/2" clearance from the bottom.
  • 2 spoon in yogurt.
  • 3 cover with plastic wrap and let drain in the refrigerator for at least 1-1/2 hours or overnight.
  • 4 about 20 minutes before serving, position rack in top third of oven; preheat to 425°f.

  • 13 drizzle the roasted bananas with any juices accumulated in the pan and serve with a dollop of the chocolate cream.
  • 14 sprinkle with toasted, chopped nuts, if desired.

  • 1 combine first 8 ingredients in a large bowl.
  • 2 add shrimp and toss to coat.
  • 3 melt 3 t.
  • 4 of the butter in a large skillet over medium heat.
  • 5 add worcestershire, lemon juice and garlic and saute about 2 minutes.
  • 6 add shrimp and saute until opaque.
  • 7 add remaining butter slowly until melted.
  • 8 transfer shrimp to serving plate and pour sauce over.

Southern Praline Sweet Potato Casserole

Ingredients

  • Servings: 8
  • 6 large sweet potatoes (about 5 1/2 pounds)
  • 3/4 cup milk
  • 1/2 cup unsalted butter
  • 3 eggs, lightly beaten
  • 3/4 cup dark brown sugar, packed
  • 4 tablespoons unsalted butter
  • 3/4 cup dark brown sugar, packed
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon grated nutmeg
  • 3/4 cup heavy cream
  • 1 1/2 cups coarsely chopped pecans
  • 2 teaspoons vanilla

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 pierce potatoes several times with a fork or icepick and place on a baking pan; bake in preheated oven 1 1/4-1 1/2 hours or until potatoes are tender; set aside until cool.
  • 3 in a small pan, heat milk and butter until hot but not boiling; keep warm.
  • 4 cut the potatoes in half and scoop out the insides into a mixing bowl and discard the skins.
  • 5 mash the potatoes with whatever method you prefer (masher, ricer, food mill, etc).
  • 6 stir milk into potatoes; add eggs and continue to blend until well combined; stir in brown sugar.
  • 7 butter a 9 x 13 inch casserole or baking dish and spread mixture into pan; set aside while making topping.
  • 8 melt the butter in a large saucepan over low heat; stir in the brown sugar, salt, cinnamon, nutmeg, cream.
  • 9 and pecans.
  • 10 heat to a simmer and cook, stirring constantly, until mixture is thick, 5-7 minutes (if mixture starts to boil, reduce heat slightly to maintain a simmer).
  • 11 remove from heat and stir in vanilla.
  • 12 pour topping over potatoes in dish, spreading with spatula.
  • 13 bake in preheated oven for 30 minutes, or until slightly crusty and set.
  • 14 serve immediately.

Pecan Pie

  • 1 9 inch pie shell, in pan
  • 1 cup pecan halves
  • 1 (1 lb) box light brown sugar
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 1/2 teaspoons vanilla
  • 3 eggs
  • 1/2 cup melted butter (or margarine; i use butter)

Recipe

  • 1 preheat oven to 325 arrange pecans in rings in bottom of pie shell in a large bowl: blend sugar, flour and salt mix in milk and vanilla beat in eggs one at a time mix in butter a little at a time pour mixture over pecans in pie shell; pecans will float up bake 1hour 15 minutes or until golden& puffy note: i sometimes use 2 frozen 8" pie shells (not deep dish) and increase pecans to 2 cups.
  • 2 one cup of pecans per pie shell.
  • 3 if you make two pies out of the above recipe be sure to cut back on baking time to about 45 minutes.

Tomato, Onion & Parsley Salad

Ingredients

  • 3 lbs tomatoes, firm-ripe
  • 1 red onion ( ok too)
  • 1/2 cup italian parsley, chopped
  • 1/3 cup extra virgin olive oil
  • 1/3 cup lemon juice
  • 1 teaspoon cumin, fresh ground
  • 1/2 teaspoon black pepper
  • salt, to taste

Recipe

  • 1 rinse and core tomatoes; cut into 1/2-inch-thick wedges.
  • 2 peel and sliver onion. in a colander, rinse and drain onion.
  • 3 combine tomatoes, onion, and parsley in a large bowl.
  • 4 add olive oil, lemon juice, cumin, and pepper; mix gently, adding salt to taste.

Pecan Mississippi Mud Cake

  • 1/4 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 3 tablespoons baking cocoa
  • 1/4 teaspoon salt
  • 2 tablespoons chopped pecans
  • 3 tablespoons butter
  • 1 tablespoon 2% low-fat milk
  • 2 teaspoons 2% low-fat milk
  • 2 teaspoons baking cocoa
  • 1 cup confectioners' sugar
  • 1/8 teaspoon vanilla extract
  • 1/3 cup marshmallow creme
  • 2 tablespoons pecans, coarsely chopped

  • 1 cake:.
  • 2 heat oven to 350.
  • 3 coat a 6 inch springform pan with nonstick cooking spray and dust with flour; set aside.
  • 4 in a small mixing bowl, cream butter and sugar. beat in egg and vanilla.

  • 13 immediately spread marshmallow creme over hot cake.
  • 14 drop 2 tbsp of frosting over creme; cut through with a knife to swirl.
  • 15 cool completely.
  • 16 carefully run a knife around edge of pan to loosen; remove sides of pan.
  • 17 spread remaining frosting over top and sides of cake.
  • 18 sprinkle pecans on top.

Julia's Simple Chicken & Dumplings

Ingredients

  • Servings: 6
  • 1 (3 lb) whole chickens
  • 1 onion, sliced
  • 5 cloves garlic, minced
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 1/4 cup milk
  • 3 cups flour
  • 3/4 cup water
  • 1/2 teaspoon salt
  • 1 teaspoon pepper

Recipe

  • 1 place all listed ingredients into stock pot and add just enough water to cover chicken.
  • 2 simmer for approximately 40 minutes or until chicken parts easily from bone.
  • 3 reduce heat to low.
  • 4 remove chicken from pot and allow to cool.
  • 5 separate meat from bones, divide into bite-sized pieces, and set aside.
  • 6 discard bones.
  • 7 in a medium bowl, combine flour, water, salt and pepper for dumplings and mix well.
  • 8 dough should be well-defined, barely sticky, and easy to handle by hand: if it is too sticky, add more flour, or if it is crumbling, add more water.
  • 9 turn dough out onto a lightly floured surface and roll with a rolling pin to 1/8" thickness.
  • 10 return chicken stock to a simmer and add chicken.
  • 11 with a sharp knife, cut dumpling dough into stips approximately 1" x 3".
  • 12 add strips to simmering stock, stirring as you add them to keep them from sticking to each other or to the pot.

  • 1 place lamb cubes in a large shallow container. combine the soy sauce, brown sugar, sherry, garlic powder, and cinnamon, stirring well. pour over the lamb. cover and marinate in the refrigerator at least 4 hours, stirring lamb occasionally.
  • 2 combine the red currant jelly and mustard in a small saucepan; bring to a boil, stirring until the jelly dissolves and the mixture is blended. remove the jelly mixture from the heat, and set aside.
  • 3 remove lamb cubes from the marinade. thread the lamb on skewers.
  • 4 alternate vegetables on separate skewers.
  • 5 grill lamb kabobs over medium coals for 20 minutes, turning frequently. after 20 minutes, place vegetable kabobs on the grill, and grill both lamb and vegetables for an additional 10 to 15 minutes or until they have reached your desired degree of doneness. turn and baste the kabobs frequently with the jelly mixture.

  • 1 make the cake: preheat oven to 350°; grease and flour a 9-inch square or round cake pan.
  • 2 in a bowl, combine the flour, cinnamon, ginger, cloves, and salt; stir with a fork to mix well.
  • 3 in a big bowl, combine the vegetable oil, cane syrup, and egg; stir with a fork or whisk to combine well.
  • 4 add about 1/3 or the flour mixture to the syrup mixture and then stir gently, just until the flour disappears.
  • 5 add the baking soda to the hot water, and then stir about half the water into the batter.
  • 6 stir another 1/3 of the flour mixture, then the remaining water, and finally the remaining flour, stirring gently each time just to mix everything well.
  • 7 quickly pour the batter into the prepared pan, and bake for 30-35 minutes, until the cake springs back when touched gently in the center, and is beginning to pull away from the sides of the pan.
  • 8 make the frosting: in a bowl, beat the butter until light and fluffy; add in half the powdered sugar, the vanilla, and salt; beat with a mixer at medium speed until smooth.
  • 9 add the remaining powdered sugar and the cane syrup, and beat until smooth and creamy, stopping to scrape down the bowl and mix well.
  • 10 to complete: if cake is round, cool the cake in the pan on a rack, for 10 minutes, turn it out of the pan, and place it, top side up, on a wire rack to cool completely; place cooled cake on a serving plate or cake stand, top side down, and spread the frosting over it generously, covering the top and sides.

  • 6 stir so all ingredients are well combined.
  • 7 add the egg yolks and remove from the heat.
  • 8 pour mixture in a 9x9" baking dish.
  • 9 bake in the preheated 300 degree oven for 10 minutes.
  • 10 remove the dish from the oven and refrigerate for 2 hours or until completely cooled.
  • 11 heat oil in a deep fryer.
  • 12 form balls and roll in the additional flour.
  • 13 deep fry the cheese balls, a few at a time, until golden brown.

Mama's Kings Ranch Chicken Casserole (southeast Texas Style)

  • 1 add enough water to pot to cover chicken completely. boil chicken until it is completely done( normally takes about 45 minutes).
  • 2 preheat oven to 350.
  • 3 in a large mixing bowl combine the cream of chicken, cream of mushroom, rotel tomatoes and 1/2 to 3/4 a can of water. mix well.
  • 4 in a 9x13 pan layer the ingredients starting with the doritos, then the shredded chicken, cheese, and soup mixture on top. repeat layering the ingredients in the same order until you get to the top of the pan or run out of ingredients.
  • 5 place pan in the oven and bake for 20 minutes.

Tomato-based Beef Stew

Miss Edie's Cinnamon Chicken Wings

  • 2 lbs chicken wings (or more, as many as you want!)
  • vegetable oil or peanut oil
  • 2 cups flour
  • 1 tablespoon salt

  • 1 soak wings in brine to remove impurities for about 30-60 minutes. then rinse with cold water.
  • 2 cut wings at joints with kitchen shears (save the tips and freeze them for stock).
  • 3 combine flour, salt and pepper in large bowl or plate for dredging.
  • 4 sprinkle lightly with mccormick's cinnamon sugar (resist the temptation to be liberal; that can make the skin gooey).
  • 5 pat wings dry.
  • 6 heat oil in electric skillet to 375 degrees.
  • 7 dredge sugared wings into flour mixture. remember to shake off excess flour.
  • 8 put no more than 8-10 pieces into skillet at a time. cook until golden brown and crispy.
  • 9 drain cooked wings on newspaper or grocery bags. don't use paper towels - this makes them soggy. i know it sounds like it takes forever, but this is just an estimated time.
  • 10 if you want to make more, just replenish your flour mixture, and you shouldn't need anymore oil. i know it's a lot of oil, but these wings must be deep-fried to enjoy the taste. eat them with fries or salad. they go great with a nice pinot grigio too.

Zippy Black Bean Salsa

  • 2 combine and toss together black beans, diced roasted red pepper, corn, olives, cilantro, and lime juice.
  • 3 mince chipotle pepper until pureed; combine with salsa and spices; stir into bean mixture.

The " Rock Your World" Chili

  • 3 -4 lbs chuck
  • 2 large onions
  • 2 -4 garlic cloves (optional)

  • masa harina (or cornstarch and water)

Recipe

  • 1 in a heavy pot, render the bacon until crisp, then add the meat and fry in batches so it browns. scoop out the meat and set aside.
  • 2 cook the onions and garlic in the fat until soft. if you're worried about health, drain off the extra fat at this point.
  • 3 add the chile powder, paprika, cumin and salt; fry for bit and put the meat back in pan. toss everything around so it's well coated. add enough water to cover, put a heavy lid on it and simmer for a couple hours.
  • 4 when it's close to serving, stir in some masa harina or cornstarch and water to thicken a little.
  • 5 serve it with chopped onion, chiles, and cilantro if you want.

Southern Seafood Gumbo

  • 2 celery ribs, chopped with leaves
  • 1 green pepper, medium, chopped
  • 3 garlic cloves, minced

  • 14 1/2 ounces tomatoes, diced undrained
  • 1/4 teaspoon cayenne pepper
  • 1 lb okra, sliced (frozen thawed)
  • 1 lb catfish fillet, cut into 3/4-inch cubes
  • 3/4 lb shrimp, uncooked medium, peeled and deveined
  • 3 cups cooked long-grain rice

Recipe

  • 1 in a large saucepan, saute the onion, celery, green pepper and garlic in oil until tender.
  • 2 stir in the v8 juice, tomatoes and cayenne; bring to a boil.
  • 3 reduce heat; cover and simmer for 10 minutes.
  • 4 stir in okra and catfish; cook 8 minutes longer.
  • 5 add the shrimp; cook about 7 minutes longer or until shrimp turn pink.
  • 6 place rice in individual serving bowls.

Southern Scallops With Sweet Tea Chili Sauce

  • 1/4 cup extra virgin olive oil, divided
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh lime juice

  • 18 large sea scallops (about 1.5 pounds)
  • 2 tablespoons sour cream
  • 3 tablespoons chopped fresh chives
  • 1/2 cup sugar
  • 1/2 cup rice vinegar
  • 3/4 teaspoon dry crushed red pepper
  • 1/2 teaspoon liquid iced tea concentrate
  • 2 tablespoons plum sauce
  • 1 tablespoon minced fresh ginger
  • 2 teaspoons minced garlic
  • 1 teaspoon cornstarch

  • 1 prepare sweet tea chili sauce. cool completely.
  • 2 combine 2 t. oil, juices,and pepper in a large zip-top freezer bag. add scallops. seal, marinate 15 minutes. drain. discard marinate. pat scallops dry.
  • 3 heat 1 t. oil over high. sear half of scallops, 2 minutes on each side or until browned. remove to plate. repeat with another tablespoon of oil and rest of scallops.
  • 4 drizzle 3 t. tea sauce over each serving. put 2 teaspoons sour cream on each and sprinkle with chives.
  • 5 sweet tea chili sauce: combine everything with a whisk. microwave on high for 5 minutes, whisking after each minute.

Simple Pickled Beets - Canned

  • 10 (14 1/2 ounce) cans sliced beets, drained
  • 1 1/2 cups granulated sugar
  • 2 cups distilled vinegar, 5% acidity
  • 3/4 cup water
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves

Recipe

  • 1 put sugar, water, vinegar and spices in large pot.
  • 2 bring to boil.
  • 3 add drained beets to pot, cover, and return to boil.
  • 4 reduce heat and simmer for 5 minutes.
  • 5 pack beets in hot sterilized pint jars.
  • 6 pour hot liquid into jars, leaving 1/4-inch headroom.
  • 7 use a sterilized spoon handle to remove any air bubbles.
  • 8 seal with hot, sterilized lids.
  • 9 put jars into a hot water bath with water covering the top of the jars by 1-2 inches.
  • 10 cover, bring water bath to a boil and reduce heat to simmer.
  • 11 simmer in water bath for 30 minutes.
  • 12 remove jars from water and place on clean dish towel to cool.
  • 13 when jars are completely cooled the lids should be slightly concave.
  • 14 if any jars do not seal, refrigerate them.
  • 15 refrigerated, they will keep for several months.
  • 16 chill before serving.

Sublime Clam Chowder

  • 3 tablespoons unsalted butter (more or less as needed)
  • 2 medium yellow onions, minced
  • 1 1/2 lbs red potatoes, cut into 1 cm. cubes
  • 1 quart whole milk
  • 1 (8 ounce) bottle clam juice
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon cracked black pepper (to taste)
  • 1 -2 sage leaf
  • 10 sprigs fresh rosemary (the little leaves)
  • 1 -2 bay leaf
  • 1 -2 teaspoon sea salt (to taste)
  • 3 stalks celery, in 1 cm. cubes
  • 3 lbs clams (little neck or manila, just make sure they're still alive and squirting water when you get them)

Recipe

  • 1 in a heavy bottomed pot (dutch oven), melt the bacon fat and 1-2 t. of butter. add the onions and sauté them with the lid on, stirring occasionally.
  • 2 when they're fragrant, add the potatoes and sauté together for a few minutes with the lid on, tossing occasionally.
  • 3 when the potatoes start to sear or brown, add the clam juice and the milk. stir in the liquids, and then add the celery seed, cracked pepper, sage, rosemary, bay and a little salt (add in stages to avoid making it over salty.
  • 4 when the soup starts to simmer, stir it, and taste it. add more salt and butter if it's necessary. after 4 minutes, add the celery.
  • 5 let it simmer for 5 more minutes. if you are making the soup ahead, go ahead and turn it off, and put the lid on it (if you put the clams in and then try to reheat it, they'll get all gross and rubbery). if you're serving immediately, rinse the clams and then add them to the soup. stir them in, and half cap the pot until it starts to simmer. stir when it simmers and serve when the clams open up (approximately 3 minutes).

Rondele Potato Salad

Ingredients

  • 1 (8 ounce) container rondele garlic & herb cheese spread
  • 8 medium potatoes
  • 1/2 cup sun-dried tomato, diced
  • 1/2 cup vidalia onion, diced
  • 6 slices bacon

Recipe

  • 1 peel and dice potatoes, place in large pot. cover with water and boil until potatoes flake when touched by a fork.
  • 2 while potatoes are cooking, brown and crumble the bacon.
  • 3 drain potatoes and pour them into a large bowl.
  • 4 add bacon crumbs, sundried tomatoes, onion, and entire tub of rondele cheese to potatoes. stir to blend well.
  • 5 serve hot or cold.

Steakhouse Au Gratin Potatoes

  • 3 lbs potatoes
  • 2 -4 tablespoons unsalted butter
  • 2 cups gruyere, grated
  • 1 1/2 cups half-and-half

Recipe

  • 1 preheat the oven to 375 degrees.
  • 2 peel and dice the potatoes. *i have a vegetable chopper from williams-sonoma and this step only takes 5 minutes.

  • 4 either spray a large baking dish with oil or rub it lightly with butter.
  • 5 drain and then toss the potatoes in the baking dish with the butter, thyme, nutmeg, more salt and pepper.

  • 7 top the dish with the reserved cheese.
  • 8 bake for one hour or until the cheese is nicely melted, bubbling and turning a caramel color.

  • 3 lemons (juiced & zested)
  • 3/4 cup olive oil
  • 5 garlic cloves (crushed, can substitute 2 tablespoons mined garlic)

  • 1/4 green pepper (minced)
  • 1/4 red pepper (minced)
  • 1/4 yellow pepper (minced)
  • 1 1/2 teaspoons salt

  • 1 teaspoon rosemary (dried)
  • 1/3 cup mint leaf (fresh chopped, 1 teaspoon dried)
  • 1 teaspoon oregano (dried)
  • 1/3 cup basil (fresh chopped or ground)

  • 3 lbs chicken breasts (bonless skinless)

  • 1 cube chicken breast into 1 inch cubes and set aside.
  • 2 mix all (except honey & chicken) in large bowl or container.
  • 3 add chicken breast to mixture ensuring all pieces are coated in marinade.
  • 4 cover and refrigerate over night (12hrs min, better at 24hrs).
  • 5 place chicken on skewers.

  • 1/2 cup cold water
  • 1 cup whipping cream
  • 1/4 cup sugar

  • 1/2 cup flour

Pecan Pie Jam

  • 5 cups chopped pecans (pecan pieces if buying bagged)
  • 5 cups sugar
  • 5 tablespoons dark brown sugar
  • 2 tablespoons ground ginger

  • 3 strain juice (to which 1 tablespoons cognac may be added for extra flavor). serve piping hot with spiced lamb. this is equally good served cold.

Southern Plantation Lima Beans

  • 1 lb dried lima beans
  • 1/2 lb rind from a baked ham or 1/2 lb bacon
  • 3 tablespoons flour
  • 3 tablespoons oil
  • 3 -4 dashes liquid smoke (optional)
  • salt and pepper
  • 1/4 cup coarsely chopped pecans

Recipe

  • 1 sift through the beans for “foreign bodies” and rinse.
  • 2 in a stock pot, cover the beans with 2 inches of water and soak for 4-5 hours.
  • 3 chop the baked ham rind to about 1/4 inch squares.
  • 4 if you use bacon, cook it off about three quarters of the way to render out some of the fat and drain well before chopping.
  • 5 (reserve the fat for the roux later, at your option!) drain the soaking water, add the meat to the beans and cover with water by about 2 inches.
  • 6 bring the beans to a slow boil, add the liquid smoke, salt and pepper, cover and reduce the heat to a low simmer until tender.
  • 7 (from 45 minutes to 2 hours, depending on the beans and the heat so check them often.) when the beans are nearly tender, in a small sauce pan, mix the flour and oil (you can use the leftover bacon fat) and heat, mixing until bubbling.
  • 8 because of the variable of how much water is left in the beans, i’ve found it’s better to thicken the sauce backwards.
  • 9 start spooning bean water into the roux to thicken it to a paste (like thin mashed potatoes) then adding the paste back into the beans a tablespoon at a time, and stirring to the desired thickness.
  • 10 keep in mind it won’t fully thicken until it comes to a boil and it may take a few tries to get it how you want it.
  • 11 serve in a large bowl topped with the chopped pecans.
  • 12 any leftovers will freeze.
