Quick And Easy Cornbread

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 2 1/2 cups self-rising cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup melted butter (1 stick blue bonnet works well)
  • 1 1/2 cups milk
  • 2 large eggs, lightly beaten
  • vegetable shortening

Recipe

  • 1 preheat oven to 425.
  • 2 grease sides and bottom of a 13x9 glass pan with the shortening.
  • 3 mix the cornmeal, flour, salt and sugar together.
  • 4 mix in the butter, eggs, and milk just until it's well mixed. should be the consistency of grainy glue.
  • 5 pour into the pan and bake for 25 min (i have a small oven and my cook times may be a bit off -- check at 20 could take up to 30 depending on your oven).
