Southern Sage Dressing With Giblet Gravy

Ingredients

- 1 cup finely chopped celery
- 3/4 cup finely chopped onion
- 1 cup water
- 6 cups cornbread, crumbs
- 4 cups soft breadcrumbs
- 1/2 cup butter or 1/2 cup margarine, softened
- 1/4 teaspoon rubbed sage
- 1 tablespoon salt
- 1/8 teaspoon pepper
- 4 eggs, beaten
- 2 1/4 cups chicken or 2 1/4 cups turkey broth
- giblet gravy
- 1/4 cup pan drippings from turkey or 1/4 cup chicken
- 1/4 cup all-purpose flour
- 1 1/2 cups turkey or 1 1/2 cups chicken broth
- 1/2 cup milk
- 1/4 cup turkey giblets, cooked and chopped
- 2 hard-boiled eggs, chopped
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Recipe
- 1 cook celery and onion in water over low heat until tender; drain.
- 2 combine cooked vegetables, cornbread crumbs, bread crumbs, butter, sage, salt and pepper in large bowl; mix well.
- 3 add eggs and broth, stirring until well blended.
- 4 spoon dressing into a lightly greased 13 x 9 x 2 inch baking dish.
- 5 bake at 400 degrees for 30 minutes or until lightly browned.
- 6 while dressing is baking, heat pan drippings in a large skillet over low heat.
- 7 add flour, stirring until smooth.
- 8 cook 1 minute, stirring constantly.
- 9 gradually add broth and milk; cook over medium heat, stirring constantly, until thickened and bubbly.
- 10 add giblets, eggs, salt, and pepper, stirring well.
- 11 when dressing is done, cut into squares, and serve with giblet gravy on top.
