Southern Sage Dressing With Giblet Gravy

Ingredients

  • Servings: 12
  • 1 cup finely chopped celery
  • 3/4 cup finely chopped onion
  • 1 cup water
  • 6 cups cornbread, crumbs
  • 4 cups soft breadcrumbs
  • 1/2 cup butter or 1/2 cup margarine, softened
  • 1/4 teaspoon rubbed sage
  • 1 tablespoon salt
  • 1/8 teaspoon pepper
  • 4 eggs, beaten
  • 2 1/4 cups chicken or 2 1/4 cups turkey broth
  • giblet gravy
  • 1/4 cup pan drippings from turkey or 1/4 cup chicken
  • 1/4 cup all-purpose flour
  • 1 1/2 cups turkey or 1 1/2 cups chicken broth
  • 1/2 cup milk
  • 1/4 cup turkey giblets, cooked and chopped
  • 2 hard-boiled eggs, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Recipe

  • 1 cook celery and onion in water over low heat until tender; drain.
  • 2 combine cooked vegetables, cornbread crumbs, bread crumbs, butter, sage, salt and pepper in large bowl; mix well.
  • 3 add eggs and broth, stirring until well blended.
  • 4 spoon dressing into a lightly greased 13 x 9 x 2 inch baking dish.
  • 5 bake at 400 degrees for 30 minutes or until lightly browned.
  • 6 while dressing is baking, heat pan drippings in a large skillet over low heat.
  • 7 add flour, stirring until smooth.
  • 8 cook 1 minute, stirring constantly.
  • 9 gradually add broth and milk; cook over medium heat, stirring constantly, until thickened and bubbly.
  • 10 add giblets, eggs, salt, and pepper, stirring well.
  • 11 when dressing is done, cut into squares, and serve with giblet gravy on top.
