Low-fat Creole Cauliflower

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • cooking spray
  • 1 teaspoon vegetable oil
  • 1/2 medium onion, chopped
  • 1 small green bell pepper, seeded, chopped
  • 1 small cauliflower, broken into flowerets
  • 1 (16 ounce) can stewed tomatoes, undrained, chopped
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon hot sauce
  • salt, to taste

Recipe

  • 1 spray a large nonstick skillet with cooking spray and add the oil.
  • 2 place over medium-high heat until hot and add onion, green pepper, and garlic, and saute until tender.
  • 3 add cauliflower and remaining ingredients, simmer 10-15 minutes or until cauliflower is crisp tender.
  • 4 remove and discard bay leaf before serving.
