Ingredients

- 1 onion, chopped
- 1 tomato, chopped
- 1 -2 clove garlic, minced
- 1 can green chili, drained
- 1 teaspoon bacon drippings, or cooking oil
- 1 cup long-grain rice
- 2 cups water
- salt and pepper
Recipe
- 1 saute rice in bacon drippings until rice is browned.
- 2 add onion, tomato, garlic, green chiles, and water.
- 3 simmer covered until water is absorbed.
- 4 fresh chopped cilantro may be added just before serving.
