Spanish Rice

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 cup long grain rice
  • 1 tablespoon lard or 1 tablespoon vegetable oil
  • 1 small yellow onion, finely diced
  • 2 -3 garlic cloves, finely diced
  • 1 (8 ounce) can spicy tomato sauce
  • 1 3/4 cups chicken broth or 1 3/4 cups stock
  • 1 pinch cayenne pepper
  • 1/2 teaspoon cumin
  • salt and pepper
  • 1 serrano peppers (optional) or 1 jalapeno pepper, finely diced, for heat (optional)

Recipe

  • 1 remove lids from can and set aside.
  • 2 heat lard or oil in a saucepan on medium high.
  • 3 add rice, stirring constantly.
  • 4 when rice is brown, add onion, garlic and diced pepper.
  • 5 continue to stir.
  • 6 add chicken broth, tomato sauce and spices.
  • 7 stir well.
  • 8 bring to a full boil, cover and reduce heat to medium low.
  • 9 let simmer until rice is tender and most of the broth has evaporated (20-30 minutes).
  • 10 if your rice is still a little hard add a touch of water.
  • 11 remove rice from heat and leave covered until ready to serve.
