Spanish Rice

Ingredients
- Servings: 6
- 1 cup long grain rice
- 1 tablespoon lard or 1 tablespoon vegetable oil
- 1 small yellow onion, finely diced
- 2 -3 garlic cloves, finely diced
- 1 (8 ounce) can spicy tomato sauce
- 1 3/4 cups chicken broth or 1 3/4 cups stock
- 1 pinch cayenne pepper
- 1/2 teaspoon cumin
- salt and pepper
- 1 serrano peppers (optional) or 1 jalapeno pepper, finely diced, for heat (optional)
Recipe
- 1 remove lids from can and set aside.
- 2 heat lard or oil in a saucepan on medium high.
- 3 add rice, stirring constantly.
- 4 when rice is brown, add onion, garlic and diced pepper.
- 5 continue to stir.
- 6 add chicken broth, tomato sauce and spices.
- 7 stir well.
- 8 bring to a full boil, cover and reduce heat to medium low.
- 9 let simmer until rice is tender and most of the broth has evaporated (20-30 minutes).
- 10 if your rice is still a little hard add a touch of water.
- 11 remove rice from heat and leave covered until ready to serve.
