Ingredients

- 1/4 cup olive oil
- 1 tablespoon lime juice
- 1/8 teaspoon cayenne pepper
- 4 boneless skinless chicken breast halves
- 1 (9 ounce) package fresh linguine, uncooked
- 2 tablespoons butter, melted
- 1 -1 1/2 teaspoon grated lime rind
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 (16 ounce) jar mild thick & chunky salsa
- salt and pepper
Recipe
- 1 combine first 3 ingredients in a zip-top, heavy-duty plastic bag; shake well.
- 2 add chicken; seal and refrigerate 15 minutes.
- 3 cook pasta according to package directions; drain.
- 4 add butter and lime rind; toss well and keep warm.
- 5 remove chicken from marinade; discard marinade.
- 6 heat 1 tablespoon oil in a large skillet over medium heat.
- 7 add chicken, and cook 10-15 minutes or until done, turning once.
- 8 remove chicken, and set aside.
- 9 add garlic to skillet and cook, stirring until lightly browned.
- 10 add salsa, salt, and pepper, and bring to a boil.
- 11 arrange pasta and chicken on plates; top with salsa mixture.
