Taste Of Texas Pasta And Chicken

Total Time: 1 hr 10 mins Preparation Time: 40 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1/4 cup olive oil
  • 1 tablespoon lime juice
  • 1/8 teaspoon cayenne pepper
  • 4 boneless skinless chicken breast halves
  • 1 (9 ounce) package fresh linguine, uncooked
  • 2 tablespoons butter, melted
  • 1 -1 1/2 teaspoon grated lime rind
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 (16 ounce) jar mild thick & chunky salsa
  • salt and pepper

Recipe

  • 1 combine first 3 ingredients in a zip-top, heavy-duty plastic bag; shake well.
  • 2 add chicken; seal and refrigerate 15 minutes.
  • 3 cook pasta according to package directions; drain.
  • 4 add butter and lime rind; toss well and keep warm.
  • 5 remove chicken from marinade; discard marinade.
  • 6 heat 1 tablespoon oil in a large skillet over medium heat.
  • 7 add chicken, and cook 10-15 minutes or until done, turning once.
  • 8 remove chicken, and set aside.
  • 9 add garlic to skillet and cook, stirring until lightly browned.
  • 10 add salsa, salt, and pepper, and bring to a boil.
  • 11 arrange pasta and chicken on plates; top with salsa mixture.
