Fried Peach Pie

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/3 cup cold butter, in bits
  • 1/2 cup shortening
  • 6 -7 teaspoons ice water
  • 1 (12 ounce) package dried peaches
  • water, to cover
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 1 pinch nutmeg
  • 1/2 lemon, juice of
  • oil

Recipe

  • 1 crust:.
  • 2 mix flour, salt and sugar. work in butter and shortening with fingers, until dough is like cornmeal.
  • 3 stir in the ice water just enough for dough to hold together.
  • 4 gather into two balls flatten into discs.
  • 5 wrap in plastic and chill 1 hour.
  • 6 filling:
  • 7 place peaches in saucepan.
  • 8 cover with water, bring to boil cook for 15 minutes, until most of water is gone and fruit is softened. with a fork mash with the sugar, spices, and lemon juice.

  • 11 heat oil 330 degrees roll one disc of dough to 1/8 inch thick.
  • 12 cut into 4-5 inch diameter circles.
