Marinated Carrots

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 1/2 lb baby carrots, sliced in half, horizontally
  • 1 -2 garlic clove, crushed
  • 1/4 teaspoon dried oregano
  • kosher salt
  • freshly cracked black pepper
  • 2 tablespoons red wine vinegar
  • olive oil

Recipe

  • 1 parboil the carrots until just tender, about 5 minutes.
  • 2 drain well and place in a deep serving dish.
  • 3 mix the garlic, oregano, salt and pepper and red wine and pour over the carrots.
  • 4 then pour the olive oil over the carrots to cover.
  • 5 wrap with plastic and chill for 2-3 hours before serving.
