Raised Calas - Creole Deep Fried Rice Cakes

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1/2 cup rice, uncooked
  • 3 cups water, boiling
  • 1 teaspoon salt
  • 1/2 cake yeast, softened in
  • 1/2 cup water
  • 3 eggs, well beaten
  • 1/4 cup sugar
  • 1/8 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 cup flour, sifted
  • oil (for frying)

Recipe

  • 1 cook rice until very soft.
  • 2 drain, mash, and cool to lukewarm.
  • 3 add yeast, beat and let rise overnight.
  • 4 in the morning, add remaining ingredients.
  • 5 beat again and let rise about 20 minutes in a warm place.
  • 6 preheat oil to 365°f.
  • 7 drop batter by tablespoons into oil and fry until golden brown.
  • 8 drain on paper towels and serve hot.
