Sweet Potato Casserole

Ingredients

• Servings: 6
• 3 lbs sweet potatoes, peeled and cooked
• 2 eggs, lightly beaten
• 1/4 cup orange juice
• 1/4 cup butter, softened
• 1/2 cup brown sugar
• 1 dash salt
• miniature marshmallow

Recipe

• 1 mash potatoes, add remaining ingredients.
• 2 pour into greased 1-1/2 qt casserole dish.
• 3 bake at 350* for 35 minutes.
• 4 spread marshmallows over top.
• 5 bake for 2 more minutes.
