Grannie's Lemon Pie

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 2 tablespoons cornstarch
  • 3/4 cup sugar
  • 1 cup boiling water
  • 1/4 cup fresh lemon juice
  • 1 tablespoon butter
  • 2 eggs
  • 1 pinch salt
  • lemon rind
  • 2 tablespoons sugar

Recipe

  • 1 combine cornstarch and sugar in a double-boiler. add water slowly, stirring constantly. cook until thick and smooth.
  • 2 add slightly beaten egg yolks, butter, lemon rind, juice and a few grains of salt. cook 2 minutes.
  • 3 pour into shell and cover with meringue made of egg whites and 2 tablespoons of sugar.
  • 4 bake @ 325 degrees for 20 minutes.
