Grannie's Lemon Pie

Ingredients

- 2 tablespoons cornstarch
- 3/4 cup sugar
- 1 cup boiling water
- 1/4 cup fresh lemon juice
- 1 tablespoon butter
- 2 eggs
- 1 pinch salt
- lemon rind
- 2 tablespoons sugar
Recipe
- 1 combine cornstarch and sugar in a double-boiler. add water slowly, stirring constantly. cook until thick and smooth.
- 2 add slightly beaten egg yolks, butter, lemon rind, juice and a few grains of salt. cook 2 minutes.
- 3 pour into shell and cover with meringue made of egg whites and 2 tablespoons of sugar.
- 4 bake @ 325 degrees for 20 minutes.
