Tequila Orange Glazed Grilled Pineapple

Ingredients

• 1 large fresh pineapple, peeled, cored and cut into 1 inch thick slices
• 1/2 cup tequila
• 6 tablespoons orange marmalade
• 3/4 cup brown sugar
• 6 tablespoons butter
• 1 1/2 teaspoons vanilla extract
• 1/2 teaspoon ground cinnamon
• 1 teaspoon fresh mint, finely sliced

Recipe

• 1 mix tequila, marmalade, sugar, butter, vanilla, cinnamon and mint together heat till sugar is dissolved.
• 2 preheat grill.
• 3 place pineapple on grill.
• 4 baste with tequila mixture while grilling.
• 5 turn occasionally.
• 6 grill about 10 to 15 minutes.
• 7 serve hot with a scoop of your favorite ice cream.
