Texas Spoon Bread

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 3 cups milk
  • 1 cup yellow cornmeal
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 3 eggs, separated

Recipe

  • 1 in saucepan, scald the milk; stir in cornmeal.
  • 2 reduce heat; simmer 5 minutes, stirring constantly.
  • 3 remove from heat; stir in butter, sugar, salt and baking powder.
  • 4 in small bowl, beat egg yolks.
  • 5 gradually stir a small amount of the hot mixture into yolks; return all to pan and mix well.
  • 6 in mixing bowl, beat egg whites until soft peaks form.
  • 7 fold egg whites into hot mixture until well blended.
  • 8 pour into greased 8-inch square baking dish.
  • 9 bake at 350° for 40-45 minutes or until well puffed.
  • 10 use a spoon to serve.
