Texas Spoon Bread

Ingredients

- 3 cups milk
- 1 cup yellow cornmeal
- 1 tablespoon butter or 1 tablespoon margarine
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon baking powder
- 3 eggs, separated
Recipe
- 1 in saucepan, scald the milk; stir in cornmeal.
- 2 reduce heat; simmer 5 minutes, stirring constantly.
- 3 remove from heat; stir in butter, sugar, salt and baking powder.
- 4 in small bowl, beat egg yolks.
- 5 gradually stir a small amount of the hot mixture into yolks; return all to pan and mix well.
- 6 in mixing bowl, beat egg whites until soft peaks form.
- 7 fold egg whites into hot mixture until well blended.
- 8 pour into greased 8-inch square baking dish.
- 9 bake at 350° for 40-45 minutes or until well puffed.
- 10 use a spoon to serve.
