Ingredients

• 1 cup roma tomato, chopped
• 1 cup onion, chopped
• 1/2 cup poblano peppers or 1/2 cup anaheim chilies or 1/2 cup cubanelle pepper
• 1/4 cup cilantro, chopped
• 2 garlic cloves, minced
• 1/4 cup tequila-lime vinegar

Recipe

• 1 chop and combine all ingredients.
• 2 season to taste with salt and pepper.
• 3 serve with corn chips or as garnish.
