Threadgill’s Black-eyed Peas

Total Time: 2 hrs Preparation Time: 30 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 12
  • 1 lb dried black-eyed peas, rinsed
  • 3 quarts cold water
  • 1 cup yellow onion, diced
  • 1 garlic clove, minced
  • 1 green bell pepper, diced
  • 1 teaspoon black pepper
  • salt
  • thinly sliced onion (to garnish)
  • 8 slices bacon (optional)

Recipe

  • 1 clean, rinse, and soak peas at least 30 minutes in cold water. drain and place all ingredients except salt into 4-quart pot. heat to a boil, then reduce heat and simmer until tender, about 90 minutes. add additional water as necessary. add salt to taste and garnish with sliced onion. add 8 slices of cooked bacon, cut into 1-inch pieces. put the bacon into the pot 5 minutes before the peas are done cooking. makes 12 servings.
