Threadgill’s Black-eyed Peas

Ingredients
- Servings: 12
- 1 lb dried black-eyed peas, rinsed
- 3 quarts cold water
- 1 cup yellow onion, diced
- 1 garlic clove, minced
- 1 green bell pepper, diced
- 1 teaspoon black pepper
- salt
- thinly sliced onion (to garnish)
- 8 slices bacon (optional)
Recipe
- 1 clean, rinse, and soak peas at least 30 minutes in cold water. drain and place all ingredients except salt into 4-quart pot. heat to a boil, then reduce heat and simmer until tender, about 90 minutes. add additional water as necessary. add salt to taste and garnish with sliced onion. add 8 slices of cooked bacon, cut into 1-inch pieces. put the bacon into the pot 5 minutes before the peas are done cooking. makes 12 servings.
