Tasso

Ingredients

  • 2 1/2 tablespoons paprika
  • 1 tablespoon salt
  • 2 1/4 teaspoons fresh ground black pepper
  • 2 1/4 teaspoons onion powder
  • 2 teaspoons cayenne
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons granulated onion powder
  • 1 lb boneless lean lamb butt, cut into four 1 inch thick slices

Recipe

  • 1 mix together well all the spices in a medium bowl.
  • 2 dredge each lamb slice in the mixture, pressing it into the meat.
  • 3 wrap tightly in individual pieces of plastic wrap.
  • 4 refrigerate to cure for at least three days, and up to 1 week before using.
