Rhubarb Upside Down Cake

Ingredients

- 3 cups rhubarb, diced
- 3/4 cup sugar
- 3/4 cup miniature marshmallow
- 1/4 cup butter
- 1 cup sugar
- 1 egg
- 2 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- 1 teaspoon vanilla
- 1 dash cinnamon
Recipe
- 1 preheat oven to 350 degrees f.
- 2 in a ten inch baking dish (cast iron skillet).
- 3 mix rhubarb, sugar and marshmellows.
- 4 sprinkle dash or two of cinnamon on top.
- 5 cream together, butter, sugar egg.
- 6 sift dry ingredients together.
- 7 alternately add dry ingredients and milk to creamed mixture.
- 8 add vanilla.
- 9 pour batter on top of rhubarb mixture.
- 10 bake for 40 minutes.
- 11 serve with whipped cream.
