Rhubarb Upside Down Cake

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 8
  • 3 cups rhubarb, diced
  • 3/4 cup sugar
  • 3/4 cup miniature marshmallow
  • 1/4 cup butter
  • 1 cup sugar
  • 1 egg
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 teaspoon vanilla
  • 1 dash cinnamon

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 in a ten inch baking dish (cast iron skillet).
  • 3 mix rhubarb, sugar and marshmellows.
  • 4 sprinkle dash or two of cinnamon on top.
  • 5 cream together, butter, sugar egg.
  • 6 sift dry ingredients together.
  • 7 alternately add dry ingredients and milk to creamed mixture.
  • 8 add vanilla.
  • 9 pour batter on top of rhubarb mixture.
  • 10 bake for 40 minutes.
  • 11 serve with whipped cream.
