Sweet Bell Pepper Soup

Ingredients
- 2 tablespoons unsalted butter
- 2 large onions
- 2 medium size carrots
- 6 cups chicken stock
- 2 1/2 lbs sweet red peppers
- 1 cup skim milk
- salt and pepper
- 1/4 teaspoon thyme
- sour cream
Recipe
- 1 melt butter in a large saucepan and saute chopped onions over low heat until soft.
- 2 add sliced carrots, 6 cups chicken stock and bring to a boil. reduce heat and simmer 20 minute.
- 3 add rough chopped red bell peppers and cook 20 min or till soft.
- 4 remove from heat, add skim milk, salt and pepper to taste and thyme. remove from heat.
- 5 when soup is cooled, place in blender and puree in batches.
- 6 to serve, reheat. be sure not to boil.
- 7 place a dollop of sour cream on each bowl of soup. enjoy.
