Lamb Tenderloin Wraps

Ingredients
- Servings: 6
- 1 whole lamb tenderloin
- 1 medium sweet onion, peeled and quarterd
- 9 -10 pieces apple-smoked bacon, slices (or your favorite bacon)
- 9 -10 slices of aged swiss cheese
Recipe
- 1 remove any of the silver membrain with the edge of your knife.
- 2 cut the loin into 2 to 2.5" slices.
- 3 with the tip of your knife make 1" slit in the ctr of each piece.
- 4 break down each onion quarter into 2 layer pieces.
- 5 stuff each slice of loin with 1 of the 2 layer pieces of onion.
- 6 wrap each piece of loin with a slice of bacon. with the ends of the bacon tucked under.
- 7 grill or broil @ medium heat until cooked trough, turning half way through the cooking process and the bacon is crispy.
- 8 once cooked you place a piece of cheese top each piece of meat and let melt.
- 9 let stand 5 minute
- 10 serve warm, enjoy.
