Texas Chili

Total Time: 15 hrs 50 mins Preparation Time: 20 mins Cook Time: 15 hrs 30 mins

Ingredients

  • 2 tablespoons olive oil
  • 3 lbs chuck roast
  • 1 quart water
  • 1 chopped onion
  • 10 crushed garlic cloves
  • 1 (14 ounce) can diced tomatoes
  • 4 tablespoons chili powder
  • 1/2 teaspoon cayenne pepper
  • 3 tablespoons cumin
  • 3 tablespoons paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 3 tablespoons flour
  • 6 tablespoons cornmeal
  • 1/2 cup water

Recipe

  • 1 grind roast for chili meat and sear in olive oil until gray, not brown.
  • 2 stir in chopped onion and one quart water. bring to a bubbling simmer and let simmer 1 1/2 hours.
  • 3 add all other ingredients except flour, cornmeal and water. let simmer for 3 hours.
  • 4 mix flour and cornmeal in 1/2 cup water and add to pot. let simmer 30 more minutes. taste to see if more water or salt is needed.
  • 5 works beautifully in a crockpot as well.
