Sweet Potato Custard Pie

Ingredients

  • Servings: 8
  • 1 unbaked 9-inch pie shell
  • 2 eggs, slightly beaten
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1 teaspoon orange rind, grated
  • 1 3/4 cups milk
  • 2 1/2 cups raw sweet potato, peeled grated and slightly packed
  • 1 tablespoon butter, melted

Recipe

  • 1 combine eggs, sugar, salt, nutmeg, cinnamon, orange rind and milk.
  • 2 add sweet potatoes, grated just before adding to milk mixture.
  • 3 stir in melted butter.
  • 4 pour filling into pie shell.
  • 5 bake at 400 degrees fahrenheit for 45 to 50 minutes, or until knife inserted 1 inch from edge comes out clean.
  • 6 serve slightly warm or cold.
