Sweet Potato Custard Pie

Ingredients

- 1 unbaked 9-inch pie shell
- 2 eggs, slightly beaten
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1 teaspoon orange rind, grated
- 1 3/4 cups milk
- 2 1/2 cups raw sweet potato, peeled grated and slightly packed
- 1 tablespoon butter, melted
Recipe
- 1 combine eggs, sugar, salt, nutmeg, cinnamon, orange rind and milk.
- 2 add sweet potatoes, grated just before adding to milk mixture.
- 3 stir in melted butter.
- 4 pour filling into pie shell.
- 5 bake at 400 degrees fahrenheit for 45 to 50 minutes, or until knife inserted 1 inch from edge comes out clean.
- 6 serve slightly warm or cold.
