Spicy Stewed Okra

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 4 slices bacon, cut into 1 inch pieces
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 3 large garlic cloves, smashed
  • 4 cups fresh okra, cut into 1/2 inch pieces
  • 2 (10 ounce) cans rotel tomatoes & chilies, undrained (1 original & 1 extra spicy)
  • salt & freshly ground black pepper

Recipe

  • 1 brown bacon in large skillet on medium-high heat.
  • 2 add chopped onion, bellpepper, and smashed garlic. saute until onions become translucent.
  • 3 stir in okra pieces, both cans of undrained rotel, salt, and pepper (to your liking) until well incorporated.
  • 4 simmer on medium heat for about 15-20 mins or until liquid has mostly evaporated.
  • 5 tip: do not over stir as soft okra will break apart and create mush.
