Spicy Stewed Okra

Ingredients

- 4 slices bacon, cut into 1 inch pieces
- 1 small onion, chopped
- 1 bell pepper, chopped
- 3 large garlic cloves, smashed
- 4 cups fresh okra, cut into 1/2 inch pieces
- 2 (10 ounce) cans rotel tomatoes & chilies, undrained (1 original & 1 extra spicy)
- salt & freshly ground black pepper
Recipe
- 1 brown bacon in large skillet on medium-high heat.
- 2 add chopped onion, bellpepper, and smashed garlic. saute until onions become translucent.
- 3 stir in okra pieces, both cans of undrained rotel, salt, and pepper (to your liking) until well incorporated.
- 4 simmer on medium heat for about 15-20 mins or until liquid has mostly evaporated.
- 5 tip: do not over stir as soft okra will break apart and create mush.
