Salt Lamb, Beans And Hominy

Total Time: 5 hrs 10 mins Preparation Time: 10 mins Cook Time: 5 hrs

Ingredients

  • Servings: 6
  • 1/2 lb navy beans (drained canned beans is fine)
  • 1/2 lb hominy (drained canned hominy is fine)
  • 1/2 lb salt lamb
  • salt and pepper, to taste
  • marjoram

Recipe

  • 1 rinse beans and hominy; place in separate bowls, cover with water and soak overnight (if you use canned, skip this step).
  • 2 drain off water; combine beans and hominy and cover with fresh water to cover.
  • 3 cut salt lamb into strips and place on top.
  • 4 season and simmer about five hours, adding more water as necessary.
