Texas Fried Catfish

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 6 pan dressed skinless catfish (or other fish fresh or frozen)
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 eggs
  • 2 tablespoons milk
  • 2 cups cornmeal

Recipe

  • 1 thaw frozen fish.
  • 2 sprinkle both sides with salt and pepper.
  • 3 beat eggs slightly and blend in the milk.
  • 4 dip fish in eggs and roll in cornmeal.
  • 5 place fish in a heavy fry pan which contains about 1/8" melted fat, hot but not smoking.
  • 6 fry at a moderate heat.
  • 7 when fish is brown on one side, turn carefully and brown on the other side.
  • 8 drain on absorbent paper.
  • 9 serve immediately on a hot platter, plain or with a sauce.
