- 1 cup rice
- 1/4 cup oil
- 1 tomato, quartered
- 1 onion, quartered
- 1 garlic clove
- 1 jalapeno, minced
- 2 cups chicken broth
Recipe
- 1 place tomato, onion, and garlic in food processor. puree.
- 2 saute rice in oil until opaque.
- 3 add pureed mixture and remaining ingredients.
- 4 cover and simmer for 25 minutes without removing lid.
