Tex-mex Spanish Rice

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 cup rice
  • 1/4 cup oil
  • 1 tomato, quartered
  • 1 onion, quartered
  • 1 garlic clove
  • 1 jalapeno, minced
  • 2 cups chicken broth

Recipe

  • 1 place tomato, onion, and garlic in food processor. puree.
  • 2 saute rice in oil until opaque.
  • 3 add pureed mixture and remaining ingredients.
  • 4 cover and simmer for 25 minutes without removing lid.
