Sweet Tea Pie

Ingredients
- 6 ounces cream cheese, softened
- 1 cup unsalted butter
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter
- 2 cups sugar
- 8 large egg yolks
- 3/4 cup strong brewed tea
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 2 tablespoons flour
- 1 1/2 cups cornmeal
Recipe
- 1 to make the crust, wih an electric mixer, beat the cream cheese, 2 sticks butter until well combined.
- 2 add the flour and mix until dough forms a ball.
- 3 pat dough into 9 inch pie pan.
- 4 chill until ready to use.
- 5 to make the filling, with an electric mixer, beat 2 sticks butter and sugar at low speed until light.
- 6 add the yolks one at a time beating at low speed until well incorporated.
- 7 slolwy add the tea, lemon zest and lemon juice scrape down sides of bowl with a rubber spatula.
- 8 add 2 tablespoons flour, salt and cornmeal and mix well.
- 9 bake at 350 for 45 minutes.
- 10 cool on wire rack before serving.
