Sweet Tea Pie

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 6 ounces cream cheese, softened
  • 1 cup unsalted butter
  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter
  • 2 cups sugar
  • 8 large egg yolks
  • 3/4 cup strong brewed tea
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons flour
  • 1 1/2 cups cornmeal

Recipe

  • 1 to make the crust, wih an electric mixer, beat the cream cheese, 2 sticks butter until well combined.
  • 2 add the flour and mix until dough forms a ball.
  • 3 pat dough into 9 inch pie pan.
  • 4 chill until ready to use.
  • 5 to make the filling, with an electric mixer, beat 2 sticks butter and sugar at low speed until light.
  • 6 add the yolks one at a time beating at low speed until well incorporated.
  • 7 slolwy add the tea, lemon zest and lemon juice scrape down sides of bowl with a rubber spatula.
  • 8 add 2 tablespoons flour, salt and cornmeal and mix well.
  • 9 bake at 350 for 45 minutes.
  • 10 cool on wire rack before serving.
