Sweet Potato Casserole

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 3 lbs medium-size sweet potatoes
  • 1/2 cup firmly packed light brown sugar
  • 3 tablespoons butter, softened
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup milk
  • 2 tablespoons firmly packed brown sugar

Recipe

  • 1 in large saucepan, cook sweet potatoes in boiling salted water to cover.
  • 2 simmer till tender,about 15 min.
  • 3 then drain.
  • 4 peel sweet potatoes and mash.
  • 5 stir in 1/2 cup brown sugar,butter,cinnamon,nutmeg,and salt.
  • 6 mix well.
  • 7 blend in milk.
  • 8 pour seasoned sweet potato mixture into buttered 1 1/2 quart casserole dish or buttered individual bakers.
  • 9 sprinkle with remaining 2 tablespoons brown sugar.
  • 10 bake in center of oven to 400 degrees for 30 min.
  • 11 or until heated through.
