Rhubarb Bread

Ingredients
- Servings: 8
- 2 3/4 cups flour
- 1 1/2 cups brown sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 egg
- 1 cup buttermilk
- 1/2 cup oil
- 1 teaspoon vanilla
- 1 cup chopped rhubarb
- 2 tablespoons flour
- 2 -3 teaspoons margarine
- 2 -3 teaspoons sugar
- 1/2 teaspoon cinnamon
Recipe
- 1 grease and flour two bread tins.
- 2 prheat oven to 325 degrees f.
- 3 coat rhubarb w/ 2 tablespoons flour.
- 4 combine flour, sugar, baking soda and salt in a large bowl.
- 5 in separate bowl, combine egg, buttermilk, oil and vanilla.
- 6 mix well and stir into dry ingredients.
- 7 fold rhubarb into batter.
- 8 pour into bread pans.
- 9 sprinkle with topping mixture.
- 10 bake for 55 minutes or until toothpick comes out clean.
- 11 serve with strawberry preserves.
