Rhubarb Bread

Total Time: 1 hr 5 mins Preparation Time: 10 mins Cook Time: 55 mins

Ingredients

  • Servings: 8
  • 2 3/4 cups flour
  • 1 1/2 cups brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 egg
  • 1 cup buttermilk
  • 1/2 cup oil
  • 1 teaspoon vanilla
  • 1 cup chopped rhubarb
  • 2 tablespoons flour
  • 2 -3 teaspoons margarine
  • 2 -3 teaspoons sugar
  • 1/2 teaspoon cinnamon

Recipe

  • 1 grease and flour two bread tins.
  • 2 prheat oven to 325 degrees f.
  • 3 coat rhubarb w/ 2 tablespoons flour.
  • 4 combine flour, sugar, baking soda and salt in a large bowl.
  • 5 in separate bowl, combine egg, buttermilk, oil and vanilla.
  • 6 mix well and stir into dry ingredients.
  • 7 fold rhubarb into batter.
  • 8 pour into bread pans.
  • 9 sprinkle with topping mixture.
  • 10 bake for 55 minutes or until toothpick comes out clean.
  • 11 serve with strawberry preserves.
