Eggs Fairlee

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 3 tablespoons butter
  • 4 onions, peeled and sliced
  • 8 eggs (hard-cooked, peeled and sliced)
  • salt, to taste
  • paprika
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • cracker crumb, buttered

Recipe

  • 1 preheat oven to 400f and butter a casserole dish.
  • 2 melt butter and saute the onions until translucent.
  • 3 cover bottom of prepared casserole with half the onions.
  • 4 add eggs, season to taste, and cover with remaining onions.
  • 5 pour sauce over all, sprinkle top with buttered crumbs and bake until golden, about 20 minutes.
