Summer Vegetable And Chicken Dinner

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 chicken breasts, bone in
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 2 1/2 teaspoons olive oil
  • 1/2 cup chicken broth
  • 1 cup sliced zucchini, sliced
  • 1 cup yellow squash, sliced
  • 1 red bell pepper, seeded and diced
  • 1 tablespoon chopped fresh basil
  • 2 tablespoons grated parmesan cheese

Recipe

  • 1 season chicken with salt, pepper and paprika. in large deep frying pan heat oil over medium heat. add chicken and cook turning once browned well.
  • 2 pour in chicken broth to pan. cover pan and simmer 20 minutes.
  • 3 add vegetable and basil to pan. cover cook 3-5 minutes.
  • 4 season with salt and pepper if desired.
  • 5 transfer chicken to a platter arrange vegies around it and sprinkle with parmesan cheese.
  • 6 if you want you could thicken the dripping and serve along side.
  • 7 great dish to serve along side baked potatoes or a cool leaf salad.
