Summer Vegetable And Chicken Dinner

Ingredients

- 4 chicken breasts, bone in
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
- 2 1/2 teaspoons olive oil
- 1/2 cup chicken broth
- 1 cup sliced zucchini, sliced
- 1 cup yellow squash, sliced
- 1 red bell pepper, seeded and diced
- 1 tablespoon chopped fresh basil
- 2 tablespoons grated parmesan cheese
Recipe
- 1 season chicken with salt, pepper and paprika. in large deep frying pan heat oil over medium heat. add chicken and cook turning once browned well.
- 2 pour in chicken broth to pan. cover pan and simmer 20 minutes.
- 3 add vegetable and basil to pan. cover cook 3-5 minutes.
- 4 season with salt and pepper if desired.
- 5 transfer chicken to a platter arrange vegies around it and sprinkle with parmesan cheese.
- 6 if you want you could thicken the dripping and serve along side.
- 7 great dish to serve along side baked potatoes or a cool leaf salad.
