Stove-top Deli

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb corned beef, cooked and chopped
  • 14 ounces sauerkraut
  • 12 fluid ounces water
  • 3/4 teaspoon caraway seed
  • 1 1/2 cups dry rice
  • 4 fluid ounces thousand island dressing
  • 3 ounces swiss cheese, cut into strips

Recipe

  • 1 mix corned beef, sauerkraut, water and caraway seed in a large skillet and bring to a full boil.
  • 2 stir in the rice, pour the dressing over the rice and top with cheese.
  • 3 cover; remove from heat.
  • 4 let stand 5 minutes.
