Miss Patti's Blue Cheese Dip

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • 3 ounces blue cheese, crumbled
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup milk (optional) or 1/4 cup buttermilk (optional)
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove, minced
  • black pepper

Recipe

  • 1 using a fork, mash blue cheese into mayonnaise and sour cream.
  • 2 stir in lemon juice and garlic, then season to taste with black pepper.
  • 3 add milk to make dip thinner if you like.
  • 4 chill 30 minutes to blend flavors.

Southern Pecan Pie

Ingredients

  • 3 eggs (beaten)
  • 3/4 cup corn syrup
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 1 cup pecans
  • 3 tablespoons butter
  • 1 unbaked pie shell
  • 1 teaspoon vanilla

Recipe

  • 1 cut pecan in half,
  • 2 mix all ingrediants except for pecans and shell (of course).
  • 3 in a med. size bowl on med. speed until smooth.
  • 4 put all pecans in shell and pour mixture over pecans.
  • 5 heat oven on bake at 375*.

Southern Sage Dressing With Giblet Gravy

Ingredients

  • Servings: 12
  • 1 cup finely chopped celery
  • 3/4 cup finely chopped onion
  • 1 cup water
  • 6 cups cornbread, crumbs
  • 4 cups soft breadcrumbs
  • 1/2 cup butter or 1/2 cup margarine, softened
  • 1/4 teaspoon rubbed sage
  • 1 tablespoon salt
  • 1/8 teaspoon pepper
  • 4 eggs, beaten
  • 2 1/4 cups chicken or 2 1/4 cups turkey broth
  • giblet gravy
  • 1/4 cup pan drippings from turkey or 1/4 cup chicken
  • 1/4 cup all-purpose flour
  • 1 1/2 cups turkey or 1 1/2 cups chicken broth
  • 1/2 cup milk
  • 1/4 cup turkey giblets, cooked and chopped
  • 2 hard-boiled eggs, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Recipe

  • 1 cook celery and onion in water over low heat until tender; drain.
  • 2 combine cooked vegetables, cornbread crumbs, bread crumbs, butter, sage, salt and pepper in large bowl; mix well.
  • 3 add eggs and broth, stirring until well blended.
  • 4 spoon dressing into a lightly greased 13 x 9 x 2 inch baking dish.
  • 5 bake at 400 degrees for 30 minutes or until lightly browned.
  • 6 while dressing is baking, heat pan drippings in a large skillet over low heat.

  • 11 when dressing is done, cut into squares, and serve with giblet gravy on top.

Southern Scalloped Potatoes

Ingredients

  • Servings: 10
  • 4 -5 large idaho potatoes, peeled
  • 3 large onions, sliced
  • 4 tablespoons butter
  • 1/2 cup flour
  • 2 cups milk (or more)
  • salt and pepper

Recipe

  • 1 boil the potatoes until they're halfway done, then cut into slices about 1/4 inch thick.
  • 2 set aside.
  • 3 slice three onions and sauté in butter until transparent.
  • 4 sprinkle flour into this mixture and continue to sauté until flour begins to darken a little.
  • 5 add milk and continue stirring until the sauce is at the consistency you like.
  • 6 it should be medium-thick.
  • 7 add sliced potatoes to the pan and mix very well.
  • 8 add salt and pepper to taste.
  • 9 pour into a greased baking dish and bake casserole at 350 degrees until it turns a bit brown.

Pecan Pie (new Orleans Style)

  • 3 large eggs
  • 1 cup sugar
  • 1 tablespoon melted butter or 1 tablespoon margarine
  • 3 tablespoons all-purpose flour
  • 1 cup molasses
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups pecan halves
  • 2 (9 inch) unbaked pie shells

Recipe

  • 1 preheat oven to 350°f.
  • 2 in a large mixing bowl, beat the eggs, then gradually beat in the sugar, butter/margarine and flour.
  • 3 beat in the molasses, vanilla and salt.
  • 4 stir in pecans.
  • 5 pour the filling into the two unbaked pie shells.
  • 6 bake for 1 hour or until firm in the middle.

  • 3 eggs
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 6 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped or 1 cup pecan halves

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 prepare pie crust; set aside.
  • 3 in a mixing bowl, beat eggs.
  • 4 gradually beat in sugar, until light.
  • 5 add corn syrup, butter, and vanilla extract.
  • 6 fold in pecans.
  • 7 pour mixture into pie crust.
  • 8 bake 45 to 60 minutes, or until knife inserted in center comes out clean.

Southern Red Salmon Stew

Ingredients

  • 2 (46 ounce) bottles spicy hot v8
  • 28 ounces crushed tomatoes
  • 10 lbs potatoes, cut into 1-inch pieces
  • 5 yellow onions, diced
  • 3 lbs bacon
  • 2 (1 lb) packages smoked sausage
  • 8 (7 ounce) cans pink salmon
  • 4 tablespoons butter
  • 1/4 cup texas pete
  • black pepper
  • salt

Recipe

  • 1 pour both bottles of v8, crushed tomatoes, salmon, sausage, and potatoes into a large stock pot.
  • 2 saute onions in butter until translucent, then add to pot.
  • 3 fry bacon until crispy, crumble, and add to pot.
  • 4 season to taste with texas pete, salt and pepper, and cook on medium until potatoes are done and flavors have melded. it may be necessary to add water, depending on the consistency that you want.
