Low-country Barbecue Sauce (mustard Based)

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 tablespoon garlic, minced
  • 1/3 cup green bell pepper, chopped
  • 3/4 cup vidalia onion, finely diced
  • 1 tablespoon vegetable oil
  • 1/2 tablespoon crushed red pepper flakes
  • 1/4 cup dark brown sugar
  • 1/4 cup light brown sugar
  • 1 tablespoon honey
  • 1 tablespoon molasses
  • 1/4 cup apple cider vinegar
  • 2 cups prepared yellow mustard
  • 1/4 cup ketchup
  • 1/2 tablespoon worcestershire sauce
  • 1/4 cup water
  • 1 tablespoon salt
  • 1/2 tablespoon black pepper

Recipe

  • 1 sweat the garlic, green bell pepper, and onions in the vegetable oil over medium heat, just until tender. add the crushed red pepper. add the brown sugars, honey and molasses and caramelize the mixture.
  • 2 add the vinegar and let simmer for about 15 minutes.
  • 3 add the mustard, ketchup, worcestershire sauce, water, salt, and black pepper and simmer until reduced by one-fourth.

Fruit Cobbler Carolina

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 1/2 cup butter, unsalted
  • 2 cups self rising flour (i used pillsbury)
  • 2 cups sugar
  • 1 tablespoon cinnamon
  • 1 pinch nutmeg (optional)
  • 2 cups whole milk
  • fresh fruit (enough fruit to cover the whole pan ) or canned pie filling (enough fruit to cover the whole pan )

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 spray a 13 by 9 pan ( i used pyrex glass) with non stick cooking spray.
  • 3 melt the butter, then pour evenly in pan.
  • 4 in a medium bowl, whisk together the flour, sugar, and spices.
  • 5 add milk to bowl and whisk til smooth, about 1 minute.
  • 6 pour batter over top of butter in pan. it will be very loose and there is no need to stir it.
  • 7 place fruit evenly in pan and press down slightly with hands.
  • 8 put pan on lower rack in preheated 350 degree oven and let bake til golden brown and batter is puffed over fruit.
  • 9 approximately 45 minutes to 1 hour.

Ginger Pear Preserves

Total Time: 4 hrs Preparation Time: 1 hr Cook Time: 3 hrs

Ingredients

  • 8 cups sliced fresh pears, peeled, cored
  • 4 cups sugar
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • 1/4 cup pear liqueur
  • 1/4 cup finely chopped candied ginger
  • 2 teaspoons grated fresh ginger
  • 3 fluid ounces liquid fruit pectin

Recipe

  • 1 mix pears and sugar; cover and let sit overnight unrefrigerated.
  • 2 add remaining ingredients (except pectin).
  • 3 bring to a boil and then simmer until mixture has reduced to almost half.
  • 4 mash pears with a potato masher until desired consistency is reached (as chunky or as smooth as you like).
  • 5 bring mixture back to a boil and add pectin. boil one minute.
  • 6 pack mixture into sterilized jars and process in a water bath for 10 minutes.
  • 7 makes about 12 - 4 oz. jars.

Okra Pilau

Total Time: 2 hrs Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 6 slices bacon, chopped
  • 1 lb okra, sliced
  • 1 1/2 cups dry long grain rice
  • 1 1/4 cups water
  • salt & pepper

Recipe

  • 1 fry the bacon until it is half cooked. add the okra and cook for a further 5 minutes. stir in the rice, water, salt, and pepper. pour mixture into the top part of a rice steamer. in the bottom part of the rice steamer place several cups of hot water. insert the top part and cook, covered, for 1 to 1 1/2 hours or until the rice just starts to dry.

Onion Soup (cream Onion Soup)

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1/4 cup butter
  • 5 large onions
  • 5 cups beef broth (4 small cans)
  • 1/2 cup dried celery leaves or 1/2 cup dried celery flakes
  • 1 large potato (peeled & quartered)
  • 1 cup port or 1 cup cream sherry
  • 3/4 cup vinegar (or more)
  • 4 tablespoons sugar
  • 1 cup heavy whipping cream
  • 1 tablespoon dried parsley flakes
  • salt & pepper

Recipe

  • 1 melt butter in a large pot.
  • 2 add quartered onions, beef broth, celery leaves or flakes, quartered potato & bring to a boil.
  • 3 cover pot & simmer on medium-low heat for 30 minutes.
  • 4 puree little by little in a blender, emptying the purée from the blender into another large pot.
  • 5 continue to purée little by little, so that it won't splash out of the blender & placing the purée in the 2nd pot, until all of the purée is in the 2nd pot.
  • 6 mix in the wine, vinegar & sugar.
  • 7 bring to boil again & then simmer on medium-low heat for 5 minutes.
  • 8 stir in the cream, parsley, salt & pepper.
  • 9 heat on low flame another 5 minutes & be very, very careful not to boil!

Milk Chocolate Fudge

Total Time: 17 mins Preparation Time: 12 mins Cook Time: 5 mins

Ingredients

  • 1 1/2 cups sugar
  • 2/3 cup evaporated milk
  • 2 tablespoons butter
  • 1/4 teaspoon salt
  • 2 cups mini marshmallows
  • 1 1/2 cups milk chocolate chips
  • 1/2 cup chopped nuts
  • 1 teaspoon vanilla

Recipe

  • 1 line 8x8in baking dish with foil.
  • 2 in heavy saucepan, combine sugar,milk, butter and salt.
  • 3 bring to a full boil, stirring.
  • 4 continue to boil,stirring for 4 minutes.
  • 5 remove from heat.
  • 6 stir in marshmallows,choc chips, nuts, and vanilla.
  • 7 stir hard until all is smooth.
  • 8 pour into pan.
  • 9 refrigerate until firm.

Peachy Keen Cobbler

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 4 cups peaches, peeled, sliced
  • 2 cups sugar, divided
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon allspice (or mace or cloves)
  • 1 cup milk
  • 1/2 teaspoon vanilla
  • 1/2 cup butter (1 stick)

Recipe

  • 1 preheat oven to 350°f.
  • 2 place peaches in bowl, add 1 cup sugar. stir and set aside for 30 minutes.
  • 3 meanwhile, sift all dry ingredients together in another bowl.
  • 4 in separate bowl, add vanilla to milk. stir dry ingredients into milk mixture.
  • 5 melt butter and add to milk/flour mixture. place peach/sugar mixture in 11"x 8" baking dish. pour batter over top.
  • 6 bake at 350*f. 30 minutes. then turn up to 400*f. and bake another 15 minutes.
