Galatoire's French Fried Eggplant

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 large eggplant
  • 1 egg
  • 3/4 cup milk
  • flour
  • salt and pepper
  • oil (for deep frying)

Recipe

  • 1 peel eggplant and cut into sticks.
  • 2 salt and drain on paper towels for 15-30 minutes.
  • 3 rinse and pat dry.
  • 4 make a batter of milk, egg, salt and pepper.
  • 5 dip eggplant sticks in batter, roll in flour and deep fry until golden.
