roasted parmesan rosemary potatoes

Ingredients

  • Servings: 4
  • 1 1/2 pounds new potatoes, cut into 1-inch pieces
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon chopped fresh rosemary
  • salt and ground black pepper to taste

    Preparation Time: 15 mins Cook Time: 40 mins Ready Time: 55 mins

  • preheat oven to 425 degrees f (220 degrees c). line a baking sheet with aluminum foil.
  • mix potatoes, olive oil, parmesan cheese, and rosemary in a bowl. season with salt and pepper. spread potato mixture over prepared baking sheet.
  • bake in preheated oven until potatoes are golden brown and tender, stirring once, about 40 minutes.
