Quick And Easy Gumbo

Ingredients
- Servings: 6
- 2 cups chicken, cooked, diced
- 16 ounces frozen gumbo-style vegetables (corn, onions, okra, onions)
- 1 (14 1/2 ounce) can diced tomatoes, with juice
- 1 cup uncooked rice
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups chicken broth
- 1/8 teaspoon creole seasoning
- 1 dash crushed red pepper flakes
Recipe
- 1 saute frozen veggies in oil in a dutch oven until tender, adding all spices. stir ocassionally.
- 2 add broth, tomatoes, chicken and rice to vegetable mixture and simmer for at least 20 minutes, or until rice and veggies are done.
- 3 enjoy.
