Quick And Easy Gumbo

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 2 cups chicken, cooked, diced
  • 16 ounces frozen gumbo-style vegetables (corn, onions, okra, onions)
  • 1 (14 1/2 ounce) can diced tomatoes, with juice
  • 1 cup uncooked rice
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups chicken broth
  • 1/8 teaspoon creole seasoning
  • 1 dash crushed red pepper flakes

Recipe

  • 1 saute frozen veggies in oil in a dutch oven until tender, adding all spices. stir ocassionally.
  • 2 add broth, tomatoes, chicken and rice to vegetable mixture and simmer for at least 20 minutes, or until rice and veggies are done.
  • 3 enjoy.
