Potatoes A L'alsacienne

Ingredients

  • Servings: 2
  • 2 slices turkey bacon, chopped
  • 1 lb potato
  • 1/4 cup shallot, coarsely chopped
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/4 tablespoon fresh tarragon, chopped
  • 1/4 tablespoon fresh thyme leave, chopped
  • 1/4 tablespoon fresh parsley, chopped

Recipe

  • 1 peel potatoes and cut into 1 inch cubes.
  • 2 place in pot & cover with salted water. bring to boil & cook 5 minutes. drain and set aside.
  • 3 melt margarine in skillet. add olive oil, onions and bacon. cook 5 minutes.
  • 4 add potatoes. cook 10 minutes until tender and crisp.
  • 5 add herbs, salt and pepper. mix well.
