Potatoes A L'alsacienne

Ingredients

- 2 slices turkey bacon, chopped
- 1 lb potato
- 1/4 cup shallot, coarsely chopped
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/4 tablespoon fresh tarragon, chopped
- 1/4 tablespoon fresh thyme leave, chopped
- 1/4 tablespoon fresh parsley, chopped
Recipe
- 1 peel potatoes and cut into 1 inch cubes.
- 2 place in pot & cover with salted water. bring to boil & cook 5 minutes. drain and set aside.
- 3 melt margarine in skillet. add olive oil, onions and bacon. cook 5 minutes.
- 4 add potatoes. cook 10 minutes until tender and crisp.
- 5 add herbs, salt and pepper. mix well.
