Red Beans & Rice Again

Total Time: 3 hrs 25 mins Preparation Time: 25 mins Cook Time: 3 hrs

Ingredients

  • Servings: 6
  • 1 lb dried kidney beans
  • 2 quarts water
  • 1/2 lb salt lamb
  • 3 cups onions, chopped
  • 1 cup green onion, chopped
  • 1 cup fresh parsley
  • 1 tablespoon garlic salt
  • 1/4 teaspoon dried oregano
  • 1 teaspoon red pepper
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon pepper
  • 1 1/2 teaspoons hot sauce
  • 1 lb smoked sausage

Recipe

  • 1 soak beans overnight.
  • 2 add salt lamb to beans. cover and simmer 45 minutes.
  • 3 stir in next 10 ingredients. cook one hour.
  • 4 brown sausage and drain. add to bean mixture.
  • 5 cover and simmer 45 minutes, adding more water if needed.
  • 6 serve over hot rice.
