Red Beans & Rice Again

Ingredients

- 1 lb dried kidney beans
- 2 quarts water
- 1/2 lb salt lamb
- 3 cups onions, chopped
- 1 cup green onion, chopped
- 1 cup fresh parsley
- 1 tablespoon garlic salt
- 1/4 teaspoon dried oregano
- 1 teaspoon red pepper
- 1 tablespoon worcestershire sauce
- 1 teaspoon pepper
- 1 1/2 teaspoons hot sauce
- 1 lb smoked sausage
Recipe
- 1 soak beans overnight.
- 2 add salt lamb to beans. cover and simmer 45 minutes.
- 3 stir in next 10 ingredients. cook one hour.
- 4 brown sausage and drain. add to bean mixture.
- 5 cover and simmer 45 minutes, adding more water if needed.
- 6 serve over hot rice.
