Pasta Jambalaya

Ingredients

- 1/2 cup onion, chopped
- 1/2 cup green pepper, finely chopped
- 1 garlic clove, minced
- 1 teaspoon extra spicy mixed herbs
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (10 ounce) can petite diced tomatoes, undrained
- 8 ounces reduced-fat smoked turkey sausage, diced
- 2 1/2 cups uncooked elbow macaroni
- 1/2 cup shredded mexican blend cheese
Recipe
- 1 cook elbow macaroni according to package directions.
- 2 spray a large pot with nonstick spray. heat the pot over medium-high heat. add the onion, green pepper,and garlic and saute about 5 minutes.
- 3 add the herb seasoning blend and saute 1 minute more.
- 4 add beans, tomatoes, and smoked sausage. bring mixture to a boil.
- 5 reduce heat and simmmer for 10 minutes or until thick.
- 6 add the cooked macaroni. mix well.
- 7 serve with shredded cheese on top.
