Pasta Jambalaya

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1/2 cup onion, chopped
  • 1/2 cup green pepper, finely chopped
  • 1 garlic clove, minced
  • 1 teaspoon extra spicy mixed herbs
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (10 ounce) can petite diced tomatoes, undrained
  • 8 ounces reduced-fat smoked turkey sausage, diced
  • 2 1/2 cups uncooked elbow macaroni
  • 1/2 cup shredded mexican blend cheese

Recipe

  • 1 cook elbow macaroni according to package directions.
  • 2 spray a large pot with nonstick spray. heat the pot over medium-high heat. add the onion, green pepper,and garlic and saute about 5 minutes.
  • 3 add the herb seasoning blend and saute 1 minute more.
  • 4 add beans, tomatoes, and smoked sausage. bring mixture to a boil.
  • 5 reduce heat and simmmer for 10 minutes or until thick.
  • 6 add the cooked macaroni. mix well.
  • 7 serve with shredded cheese on top.
