Southern Spicy Bean Cakes

Ingredients
- 2 tablespoons butter
- 1 cup chopped sweet onion
- 2 (15 1/2 ounce) cans pinto beans, rinsed drained and divided
- 1 (8 ounce) sour cream and chive flavored cream cheese, softened
- 1 large egg
- 1/2 teaspoon salt
- 1/2 teaspoon smoked paprika (optional)
- 1/8-1/4 teaspoon ground red pepper
- 1 (8 ounce) hush puppy mix with onion
- 1/2 cup cornmeal (for dredging)
Recipe
- 1 heat butter over med.-hi in sm skillet.add onion- cook till tender.
- 2 put 1 can beans,egg, onion, cream cheese, salt, red pepper and paprika (if using) into food processor. process until smooth.
- 3 stir in hush puppy mix and gently ford in remaining can of beans.
- 4 shape into about 3 inch patties -1/2 in thick using 1/2 cup of mixture.
- 5 coat both sides of cake with cornmeal. put on waxed paper covered baking sheet.
- 6 cover & refrigrerate until firm about 1 hour.
- 7 heat 2 tbs of oil over med- hi heat. cook patties in batches for about 2 mins per side or until golden brown. add more oil as needed for frying.
- 8 drain on paper towels and keep warm.
