Pecan-stuffed Eggs

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • 6 hard-cooked eggs
  • 3 tablespoons mayonnaise
  • 1/4 cup chopped pecans
  • 1 teaspoon grated onion
  • 1 teaspoon vinegar
  • 1/4-1/2 teaspoon dry mustard
  • 1/8 teaspoon salt
  • 1/2 teaspoon minced fresh parsley
  • fresh parsley sprig (optional)

Recipe

  • 1 slice eggs in half lengthwise and remove yolks. mash yolks with a fork.
  • 2 add next 7 ingredients.
  • 3 spoon mixture into reserved egg whites. garnish with parsley sprigs if desired.
