Rhubarb Relish

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 40
  • 2 cups rhubarb, finely chopped (fresh or frozen)
  • 2 cups finely chopped onions
  • 2 1/2 cups packed brown sugar
  • 1 cup vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon pepper

Recipe

  • 1 combine all ingredients in a saucepan. cook over medium heat for 30 minutes or until thickened, stirring occasionally.
  • 2 cool; store in the refrigerator.
  • 3 makes a nice condiment for poultry, lamb or beef.
