Sweetwater Ranch Spice Cake

Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon allspice
- 1/2 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/2 cup butter or 1/2 cup margarine, softened
- 1 1/2 cups packed brown sugar
- 2 egg yolks
- 1 teaspoon baking soda
- 1 1/4 cups buttermilk
- 1 teaspoon vanilla
- 2/3 cup coarsely chopped pecans
- 2 egg whites
- 1/2 cup brown sugar
Recipe
- 1 preheat oven to 350*. grease 13 x 9 inch baking pan; set aside.
- 2 sift together flour, baking powder, cinnamon, salt, allspice, ginger and nutmeg.
- 3 beat butter in large bowl of electric mixer on medium speed until creamy. add brown sugar; beat until fluffy. beat in egg yolks.
- 4 dissolve baking soda in buttermilk. add flour mixture to butter mixture alternately with buttermilk mixture, starting and ending with flour mixture. stir in vanilla. pour batter evenly into prepared pan.
- 5 prepare meringue frosting: beat 2 egg whites, using clean beaters and bowl, in medium bowl of electric mixer until stiff peaks form. gradually add brown sugar, 2 tblsp. at a time, beating well after each addition. beat until stiff peaks form.
- 6 spread frosting over cake batter. sprinkle with pecans. bake 45 minutes or until toothpick comes out clean. transfer to rack; let cool completely in pan.
