Squash Casserole With Cheese And Bacon

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 12
  • 5 -6 medium squash
  • 1 large onion, chopped
  • 6 slices bacon, cooked and crumbled
  • 2 cups cracker crumbs
  • 2 1/2 cups cheddar cheese
  • 1 cup milk
  • 2 eggs, beaten
  • 3 tablespoons butter
  • salt and pepper

Recipe

  • 1 preheat oven to 350.
  • 2 cut squash into cubes and boil with onion until tender. drain well and mash.
  • 3 add remaining ingredients, except for enough cheese and cracker crumbs to top, and mix well.
  • 4 pour into buttered casserole dish and top with remaining cheese and cracker crumbs.
  • 5 bake at 350 for 30 minutes or until brown and bubbly.
  • 6 let stand 5 minutes before serving.
