Southern Style Fried Catfish

- 3/4 cup yellow cornmeal
- 1/4 cup all-purpose flour
- 2 teaspoons salt
- 1 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 4 catfish fillets
- yellow mustard
- vegetable oil
Recipe
- 1 heat oil in a large cast iron skillet to 350 degrees. about 1 1/2 inches depth.
- 2 combine cornmeal, flour, salt, cayenne pepper and garlic powder.
- 3 coat fish with thin layer of mustard on both sides.
- 4 dredge catfish in cornmeal mixture.
- 5 fry fish for about 5-6 minutes.
- 6 remember don't overcrowd your pan or it won't be as crispy. i usually fry 1-2 fillets at a time.
