Pecan Pilaf

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 1/4 cup butter, divided
  • 1/2 cup chopped pecans
  • 1/4 cup chopped onion
  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon pepper

Recipe

  • 1 melt 1-1/2 t butter in a large skillet over medium heat. add pecans; saute' 8.minutes or until lightly browned.
  • 2 remove pecans from skillet.
  • 3 melt remaining 2-1/2 t butter in skillet over medium heat; add onion, and cook.
  • 4 until tender, stirring occasionally. stir in rice and remaining ingredients.
  • 5 bring mixture to a boil; cover, reduce heat and simmer 20 minutes until liquid is absorbed and rice is tender.
  • 6 remove from heat; stir in pecans.
